Storing trout for cooking

The longer a fish is stored in a fridge before being eaten the lesser will be its quality, a number of things effect the condition of a fish being stored such as the the length of time since the fish was caught, but by far the greatest is the temperature, this simply means the higher the temperature the quicker the fish will deteriorate.Keeping a fish fresh from the point of catching it such as by storing it in a cool box or bag  for as short a period as possible before placing the fish in your refrigerator is good practice. The ideal fridge temperature is 0 degrees  centigrade and even then i would not recommend keeping the fish longer than 48 hrs before cooking it. The fresher the better,if you are not sure when you will cook the fish its better to freeze it than to lose  its quality.
